Vegan lasagna is a must for the holidays.
Whether you want to eat it raw or cook it with vegan ingredients, this recipe is the perfect one for you.

Vegan lasagna with raw ingredients and vegan ingredients alone: 1) 1.5 cups raw almond milk 2) 1 cup cashews, rinsed and drained 3) 1 tsp ground cumin 4) 2 tbsp extra virgin olive oil 5) 2 cloves garlic, crushed (optional) 6) 1 tbsp vegan cheese (you can omit it if you want) 7) 1/2 cup raw cashews soaked in water for at least 15 minutes (optional, if you don’t like soaking) 8) 1 tablespoon vegan cheese, melted and cut into cubes (optional – add more if you prefer) 9) 1 large onion, chopped (optional but recommended) 10) 1 carrot, diced (optional if you like a little extra zing) 11) 1 green bell pepper, chopped 12) 1 red bell pepper (optional), chopped 13) 1 yellow bell pepper sliced into 1/4-inch pieces 14) 1 avocado (optional or can be frozen for up to 1 month if you use frozen), peeled and chopped (you could also use fresh avocado) 15) 1 can of tomatoes, chopped 16) 2 cans of vegan chicken broth or vegan vegan broth with tomato juice, or vegan broth or vegetable broth with water 15 oz jar vegan lasagne sauce (or vegan lasaguena sauce with tomato, onion and garlic, if desired) 1) Place the almond milk, cashews and the cashews in a blender.
2) Add the cumin, olive oil, salt and pepper to taste.
3) Blend until smooth.
4) Add in the almond and cashews mixture, and blend until it is creamy and smooth.
5) Add about 1 tbsp of the vegan cheese to the almond mixture.
6) Add more cheese if you desire.
7) Blend on high until the mixture thickens.
8) Serve with fresh parsley and extra basil.
Note: You can also use vegan lasagnas in the blender and make a paste by hand.
